Made first batch with zaatar and 3/4c whole wheat flour and when I bit into the first one thought, I just made wheat thins! You can bake on aluminum foil or right on a baking sheet with the same results, parchment just makes it easier to remove from the pan and prevents any sticking. How about silpats?
